Recipe: Italian Pistachio Cake

This month we are featuring California Pistachios in this delicious Italian Pistachio Cake.

Italian Pistachio Cake
Ingredients
6 egg yolks
9 ounces granulated sugar
2 tablespoons all purpose flour
2 teaspoons baking powder
½ teaspoon kosher salt
12 ounces Pistachios, finely ground
¼ teaspoon vanilla extract
6 egg whites
1 cup heavy cream, cold
3 tablespoons confectioner’s sugar
½ teaspoon vanilla extract

Directions
Preheat oven to 350 degrees.
Grease a 9 inch cake pan and line bottom of pan with a parchment circle cut to fit.
In a mixer bowl, beat egg yolks with half of sugar until mixture is thick and pale yellow.
Sift flour, baking powder, and salt.
Add dry ingredients to egg yolks and mix until it just comes together.
Add the rest of sugar and fold in ground Pistachios along with vanilla extract.
In a separate bowl, whisk egg whites to stiff peaks. Gently fold in the beaten whites into the batter.
Pour into prepared pan and bake about 45 minutes or until firm to the touch. Cool cake completely.
Chill mixer bowl along with beaters. When cold, beat cream until it starts to thicken. Add in confectioner’s sugar along with vanilla and beat until soft peaks. Spread on cooled cake. Top cake with chopped toasted pistachios and thinly sliced strawberries.
